Holiday time is usually a busy time for all, but if you have to do the cooking, it becomes even busier. This site will feature some easy cooking ideas for holiday periods. Stay tuned for some time saving recipes!

Feature Box

We will be catering for all countries as holidays are in different seasons in the Northern and Southern hemisphere. Some of you probably can't imagine Christmas in summer, but half the world celebrate it in the warm months. I personally couldn't imagine Christmas with snow everywhere!
Whilst many "down under" try to have a "traditional" Christmas with a hot dinner and all the trimmings, many others are enjoying poolside barbeques or patio dining with cold turkey, ham and salads.

Festive Cheese Cake

2 packages lady fingers
24 ounces cream cheese
1 cup granulated sugar
4 eggs
1 1/2 pints sour cream
1 tablespoon vanilla extract
1 tablespoon almond extract
1 (20 ounce) can cherry pie filling

Preheat oven to 375 degrees F. Line the sides of one 10-inch springform pan with lady fingers then line the bottom with lady fingers, cutting lady fingers, if necessary.

Cream the cream cheese and sugar together. Add the eggs, one at a time, beating after each addition. Stir in the extracts and fold in the sour cream. Pour batter into the prepared pan. Cover tops of lady fingers with foil.

Bake at 375 degrees F for 50 to 60 minutes, until almost set in the middle. Remove cake from oven and let stand for 1/2 hour, then remove sides of pan. Place in the refrigerator for at least 24 hours before serving. Top with fresh/canned fruit/s of your choice



Festive Coconut ice

500g icing sugar, sifted
4 cups desiccated Coconut
395g Sweetened Condensed milk
1 tsp vanilla
50g Copha, white vegetable shortening, melted

Pink and green food colouring
Silver cachous to decorate

 
1. Combine first 5 ingredients in bowl, mix well.

2. Halve mixture, press one half of mixture into foil lined 18cm x 28cm lamington pan

3. Colour remaining half of mixture with pink or green colouring, press evenly on top of white mixture.

4. Refrigerate until set, cut into desired shapes with cutters. Decorate with silver cachous.

Christmas Candy

1 pound (468 gms) white chocolate
1 cup small pretzels, broken into small pieces
1 cup pecans, chopped

Melt the chocolate. Stir the pretzels and pecans into chocolate and drop by teaspoon onto waxed paper. Handy edible gift suggestion.
